I got up at 7 am. I had coffee, read my Bible, prayed and sent the verse of the day.

Jeremiah 33:3 Call unto me, and I will answer thee, and shew thee great and mighty things, which thou knowest not.


I swept the living room and was tidying up when Cliff and Zeb got up. I checked on Alex. They are okay still no power and they were collecting as much water as they can. I checked on Momma and Daddy and they are good.

I ate an apple and almond butter for breakfast.  The Zeb and I changed the batteries in his weather station. We got the limbs and most of the leaves out of the pool. I emptied the skimmers and did a waste to remove some of the water because the pool was filled nearly to the top. After the waste, I turned it back to filter and Zeb added 3 bags of shock. We picked up the floats and things from around the pool. I baked some cookies using ready made cookie dough.

Cliff and Zeb took Nana and Pappo lunch. I stayed here. I cleaned the kitchen counter tops and the refrigerator. Did some laundry. Feed the chickens. I got 1 big blue egg. I talked to Alex and their power had come back on. There is concern that Nolichuckey Dam will fail, so they have been evacuating people who live in South Hamblen County. They have set up a shelter at Manley Baptist Church.

Cliff and Zeb returned home. I fixed beef burritos for a late lunch. I cleaned up the kitchen and switched out the laundry. 

Then I sat down at my computer, and I think that I have finally figured out how this blog site works. I kept typing up my daily journal and then it was gone some how or other I was deleting it. I actually have to press create new blog in order for it to save. Zeb helped me figure out how to get my photos to post. I'm still trying to get photos from my phone on here.

I got tired of sitting here typing so I decided to start cleaning out the guest room. I moved some boxes out that need to go to the basement. I changed the sheets and made the made nice and neat with extra comfy pillows. I put the sheets in the washer and folded a big load of Zeb's clothes.

For supper, I heated up some leftover ham and peas and made a batch of potato cakes. I really don't have a recipe for potato cakes, but I type up how I make them. It is more by feel than anything else. Sometimes I'll add bacon if I have a slice or 2 already cooked.

Potato Cakes:

A cup to a cup and a half of leftover cold mashed potatoes

1 egg

1 cup of grated cheese (today I used shredded 5 cheese Mexican)

2 teaspoons dry Ranch mix

A little flour (all-purpose or self-rising) I probably used half a cup

1/4 cup of finely chopped onion

I mix all this together until it forms a soft dough. You might have to add more or less flour or if it is to think maybe a little milk. You can add chives, scallions, bacon, ham bits, different kinds of cheese and seasonings. Salt and black pepper are always a good choice. 

Heat oil (canola, olive, butter, or avocado just whatever oil you usually use for cooking) in a skillet. Scoop out about a tablespoon of the potato mixture and let brown on one side and smash it down with the spatula. Once the first side is crisp, flip it over until that side is crisp then drain on paper towels or a wire rack. I like to sprinkle some coarse sea salt on them after I get them out of the skillet but you don't have too. These are good served with applesauce or sour cream or ranch dip or just by themselves.

Not much left to do today. I'll read a bit, jump through the shower, read my Bible and pray. I hope everyone has a good rest and a restful Sunday.
